Protein Peanut Butter Cups

Looking for a fast, delicious (and slightly nutritious...sort of) desert recipe? Then look no further! I've been wanting to make my own homemade peanut butter cups for some time, but could never quite find a recipe that I felt called to.


I browsed a lot of different recipes, but I came across this one from a website called Chocolate Covered Katie, and liked that it had additional protein on top of the peanut butter. I always appreciate a short list of ingredients too, because I had everything on hand already.


I decided to give it a go, and wow, I can honestly say these will now be a staple in my household. The recipe is SO simple, and I've revised it a bit from the original source to make it even easier to follow.


You could even omit the protein powder if desired and they would still be perfect. It's also an allergy-friendly recipe because you can easily substitute out any nut butter, and they have dairy free & gluten free chocolate chips at most grocery stores if needed.


I'm a huge peanut butter cup girlie, but I struggle with store-bought ones that always have unnecessary (and often unhealthy) added ingredients, and sometimes even toxic ones. Making these from scratch was not only a great way to know exactly what you're putting into your PB cups, but it was also fun and simple to make. This could be a great family activity for a rainy day. And, you get delicious, protein-packed peanut butter cups out of it!


Magickal Ingredients Used:

Chocolate: Properties of chocolate include self-love, romance, prosperity, grounding, focus, positivity, creativity, and motivation.

Coconut Oil: Coconut oil is often associated with spiritual and cleansing practices due to its cleansing, protective, and purifying properties. It is believed to help balance the mind and emotions, connect with one's higher self, and overcome negative energy.


The Recipe

Prep Time: 10 minutes

Total Time: ~15 minutes (plus about 20 minutes of chilling in the fridge to harden)

Yield: About 18 – 20 protein cups


Here's What You Need:

  • 1/2 cup peanut butter (or any allergy-friendly nut butter)

  • 1/4 cup protein powder (32g) (any flavor works depending on preference, I used chocolate)

  • 1/8 tsp salt

  • 2/3 cup chocolate chips or sugar free chocolate chips

  • 2 tsp coconut oil or vegetable oil (optional for extra smoothness)


Here's What To Do:

  1. Line a mini muffin tin with mini cupcake liners (or you can use a regular size muffin tin with regular cupcake liners if you want larger peanut butter cups).

  2. Stir together the nut butter, salt, and protein powder in a small bowl until thick and smooth. Set aside.

  3. Carefully melt the chocolate chips in the microwave or double boiler. If melting in the microwave, be sure to stir in 30 second increments to avoid burning. Then stir in the optional oil until smooth.

  4. Spread about a half teaspoon to the bottom and slightly up the sides of each mini cupcake liner. Be sure you have enough melted chocolate left over to top the cups with.

  5. Spoon a little over a teaspoon of the nut butter mixture into each chocolate coated liner, and then cover that with more of the melted chocolate.

  6. Chill in the fridge for about twenty minutes to set, or you can wait a few hours and the chocolate peanut butter cups will set on their own.

  7. Once the chocolate shell hardens, liners should peel off easily.

  8. Store leftovers in a cool, dry place and enjoy!
