It's that time of year - not only are the holidays fast-approaching, but I also have every single member of my family's birthday RIGHT before Christmas! From September on, it's like a mad dash to get gifts for both the birthdays and Christmas, and to find recipes that I can whip up relatively quickly for these celebrations, but that are also beautiful in appearance and will please just about everyone.
My husband's birthday was approaching, and his favorite desserts are anything consisting of strawberries. I decided I wanted to go ahead and make a strawberry cheesecake. I've never made one before, so after browsing through Pinterest, I came across this wonderful recipe from Lauren's Latest. It doesn't require many ingredients, most I had at home already, and it was easy to follow.
What I loved about this recipe was that I could make it days ahead. I made the strawberry sauce first, and let that stay in the fridge. The next day, I made the cheesecake and put it in the fridge when it was cooled and ready, then on my husband's birthday, I assembled it all together! It's a bit of a process, but it was nice to not have to do all those things in the same day.
The cheesecake is delicious, but it is definitely rich. We served ours with whipped cream and ice cream. The crust is a bit crumbly, perhaps go a bit heavier handed on the butter. The strawberry sauce is very sweet, but yummy, and you can also use store-bought but I prefer homemade. I made up my own design for the strawberries on top, but you can find other patterns on Pinterest.
